Hot Asparagus BitsIngredients
* 20 slices white bread
* 1 8-oz. pkg. cream cheese, softened
* 6 oz. blue cheese, crumbled
* 1 egg, slightly beaten
* salt
* pepper
* 20 fresh or frozen asparagus spears, cooked and drained
* 1/2 lb. butter, melted
* Parmesan cheese, grated
Directions
Trim crust from bread slices. Flatten slices with a rolling pin and set aside. Combine cream cheese and blue cheese in a bowl. Mash with fork until smooth. Add beaten egg and blend well. Season to taste. Spread one tsp. cheese mixture on bread slices. Place a spear inside each slice and roll. Dip each roll in warm melted butter, coating well and sprinkle with grated cheese. Place rolls on baking sheet, seam side down, and freeze for future use or cut each roll into three pieces and bake at 400 degrees for 20-25 minutes until golden.
